Potato Starch Cake

6 eggs
2/3 cup sugar
2/3 cup potato starch
1 tsp. baking powder (optional)
1 tsp. lemon extract (optional)

Separate eggs; beat yoks smooth.  Add sugar; beat until smooth.  Add starch; beat until smooth.  Beat white until light and fold into batter.  If desired, add baking powder, and/or lemon extract.  Bake in 375F oven for about 30 minutes in a greased and floured ring pan.
