Zucchini Cake

(from M____ E_____, next door neighbor, UT)

Mix well:
2 1/2 cups flour
1 1/2 tsp. cinnamon
1/2 tsp. baking powder
2 cups sugar
1/2 tsp. baking soda
1 tsp. salt

Beat together then add to flour mixture:
4 eggs
1 cup vegetable oil

Fold in and mix thoroughly:
2 cups shredded zucchini
1/2 cup walnuts

Bake at 350F for 35 to 40 minutes or until toothpick comes out clean from center of cake 13x9" pan.

Frosting:
Mix well:
One 3 oz. pkg. cream cheese, softened
1/4 cup butter or margarine, softened

Add:
1 Tbsp. Milk
1 tsp. vanilla
2 cups confectioners sugar
