1 nine-inch pie crust, unbaked
10 oz. frozen spinach, thawed
½ medium onion, chopped
1 cup grated cheese (Swiss or mozzarella)
2 eggs (may need 3 depending on size of pie tin)
1 cup milk (may need 1½ depending on size of tin)
1 tsp. garlic powder
Sprinkle spinach, onion, and cheese in pie crust. Beat eggs slightly. Beat in milk and garlic. Pour egg mixture into pie plate. Bake uncovered until set, in 425̊ oven 15 minutes. Reduce oven temperature to 300̊. Cook uncovered until knife inserted half-way between center and edge comes out clean, about 30 minutes longer. Let stand 10 minutes before cutting. 6 servings.
