1 can garbanzo beans
1 onion
1 bag frozen mixed cauliflower and broccoli
copious prepared mashed potatoes
Saute garbanzo beans and onion with some salt, pepper, and garlic. Microwave vegetables until still crunchy. Put garbanzo beans in the bottom of the casserole, then vegetables, then mashed potatoes, top with Parmesan cheese, bake until top browns.
