Quick Strawberry Pandowdy
(from B____ in White Rock, NM)
(vary with any fresh, juicy berries)
1/2 cup butter (or 2 Tbsp. for less fat)
1 cup flour
1 tsp. baking powder
1 cup sugar (or 1/2 or less for not as sweet)
1 cup milk
4 cups prepared berries
Heat oven to 350F. Melt butter in baking pan. Mix flour, baking powder, sugar, and milk to form a thin batter. Pour batter into sizzling butter. Add berries to cover top. Bake at 350F for 45 minutes. (Dough rises to cover berries and form a crisp, brown crust.) Serve hot or cold with whipped cream or ice cream.

Variation that I tried:
Cinnamon Pear Pandowdy
Replace sugar with packed brown sugar
Add 1 Tbsp cinnamon
1 tsp. vanilla extract
1/2 tsp. salt
use thinly sliced pears instead of berries. I think I had about 3 cups of pears.
