I'll admit I like my cornbread a bit sweet. This one that I found on the Alber's Corn Meal box was just my taste...sweet, but not overly so.
Makes 12 servings
1 cup yellow corn meal
1 cup flour
1/4 cup sugar
1 Tbsp baking powder
1 tsp salt
1 cup milk
1/3 cup oil
1 egg
Preheat oven to 400 F. Combine ingredients until corn meal is wet. Pour into greased 8-inch pan. Bake for 20-25 minutes or until toothpick in center comes out clean.
To double the recipe, bake as above in a 13x9" pan.
For Muffins: Spoon batter into a greased or lined muffin tin (makes 10-12 muffins). Fill 2/3 full. Bake at 400 F for 15 minutes.
