Cold Fudge Sundae (The Next Best Thing to Robert Redford)

(from the Chamisa Cookbook)

First layer:
1 stick margarine
1 cup flour
3/4 cup walnuts or pecans

Second layer:
1 pkg. (8 oz.) cream cheese
1 container (9 oz.) cool whip, thawed (divided)
1 cup granulated or powdered sugar (or 1/4 cup sugar and 2 Tbsp. milk)
coconut (optional)

Third layer:
3 cups cold milk
2 small pkg instant vanilla or chocolate (or one of each) or lemon pudding mix)

First layer: Cream together ingredients and spread in 9x13 inch pan.  Bake at 350F for 15-20 minutes and cool

Second layer: Beat cream cheese with sugar until smooth.  Fold in half of cool whip.  Spread over crust.  Sprinkle with coconut, if desired.

Third layer: Beat pudding mix with milk until smooth and thickened.  Spread over second layer.  Top with rest of cool whip.  May sprinkle again with coconut or with a grated chocolate candy bar.  Refrigerate several hours or over night.

Serves 16.
