2 cups whole wheat flour
2 tsp. baking powder
1 tsp. baking soda
[1 tsp. salt (omit if using buttermilk)]
2 cups buttermilk (can substitute 1 Tbsp. vinegar in regular milk, but buttermilk is best)
1 egg (2 for pancakes)
1 cup milk (1½ for pancakes)
vanilla (optional)
Sift dry ingredients twice. Combine wet ingredients in separate bowl. Add to dry ingredients. Use immediately for lightest waffles. If batter needs to be thinner, only add buttermilk and not regular milk.
