First, place the tofu in a sturdy dish, with paper towels underneath to wick out the water. Place the plate where water will not cause a problem. The tofu must then be covered in another paper towel. Put a little weight (like a can of food or a gallon of milk) on top for about twenty minutes to a half hour. When the tofu is ready after an hour, slice it and then fry it in a little oil with a little soy sauce.
Another way to remove water from the tofu is to freeze it before use. This gives a spongier texture than putting weight on, but it is easier
