1 egg
1 cup buttermilk (or 4 Tbsp. buttermilk powder and 1 cup water)
2 Tbsp. shortening or vegetable oil
½ cup flour
½ cup cornmeal
1 Tbsp. sugar (white or brown)
1 tsp. baking powder
½ tsp. baking soda
½ tsp. salt
Beat egg. Add remaining ingredients. Beat until smooth. Pour batter onto hot, greased–if necessary–griddle. Turn as soon as they are puffed and set. Bake other side until golden brown.
