1 can (15½ oz.) black beans, rinsed and drained
1 can (15½ oz.) red beans, rinsed and drained
1 can (15½ oz.) Great Northern beans, rinsed and drained
1 can (15½ oz.) black-eyed peas, rinsed and drained
1 can (8½ oz.) baby lima beans, rinsed and drained
1½ cups ketchup
1 cup chopped onion
1 cup chopped red bell pepper
1 cup chopped green bell pepper
½ cup packed brown sugar
½ cup water
2 to 3 tsp. Cider vinegar
1 tsp. Dry mustard
2 bay leaves (optional)
⅛ tsp. Black pepper
Combine all ingredients and heat on stove top until onion and peppers are tender. Remove and discard bay leaves. Makes 8 servings.
