a recipe from Smith's grocery store, White Rock, NM
1 cup uncooked short-grain brown rice
1/2 cup uncooked lentils
1/2 of an onion (or lots more)
1/2 Tbsp finely chopped bay leaf (optional)
1/2 Tbsp vegetable seasoning (option) - I add quite a bit of vegetable bouillon for flavor
2 Tbsp soy sauce
Wash rice and lentils, add 2 1/2 cups water. Cover and bring to a boil. Reduce to simmer and simmer for about 25 minutes. Chop onion and saute with seasoning. Add cooked rice and lentils, and saute with seasonings. (Or just add the onion and seasoning to the rice and lentils without sauteing.) Place in casserole dish or 9x13 pan. Top with soy sauce, cover and bake at 350 degrees for 20 minutes. (OR add the onion and soy sauce to the pot with the rice and lentils and add a little water to make it a little 'soup' when you put it in the casserole dish - if you like it more moist. It may take a little longer to bake.)
