2 tsp olive oil
4 ribs celery, chopped
2 large green peppers, chopped
1 large red onion, chopped
2 cloves garlic, chopped
1-2 Tbsp Cajun seasoning (the more the hotter)
2 Tbsp. paprika
3-4 cups cooked chicken, chopped
2 pounds smoked sausage, sliced
1 can tomatoes
1 can chicken broth
2 cups water
2 cups uncooked basmati rice, rinsed
Salt and pepper to taste
Note: Cajun seasoning has significant amounts of salt and pepper
Stove Top Method: Saute celery, peppers, onion, and garlic in olive oil using large, heavy sauce pan. Add remaining ingredients, mix well, and bring to a rolling boil over high heat. Cover with tight lid, reduce heat, and simmer for approximately 45 minutes or until rice is cooked.
Oven Method: Saute vegetables in olive oil using large, heavy, oven-ready pot. Stir in remaining ingredients, mix well, and bake covered at 350 for 1 to 1 1/2 hours or until rice is cooked.
Vegetarian: Leave out meat and substitute 1 cup water for chicken broth (W____'s note - I haven't tried this, but it should work.) **I'd probably use a vegetable stock instead of water and maybe some okra or beans or more vegetables.
