Mini Cheesecakes

1 eight-oz. package cream cheese, softened
1/4 cup sugar
1 1/2 tsp. lemon juice
1/4 tsp. vanilla extract
1 egg
6-8 vanilla wafers
canned cherry pie filling
muffin liners

Combine all the ingredients except the vanilla wafers and cherries.  Put the vanilla wafers in the bottom of a muffin tin - it works well to use muffins liners.  Spoon the cream cheese mixture on top of the wafers.  Bake at 325F for 20 minutes.  Toop the cheesecakes with cherry pie filling.

Yield: 6-8 mini cheesecakes.
