Kathleen's Spekulatius

¼ cup butter or margarine
1 egg
½ cup sugar
1½ cups unsifted all-purpose flour
1 tsp. baking powder
1 tsp. cinnamon
¼ tsp. ground clove

Cream butter. Add sugar and mix well. Add egg. Sift flour, then resift with baking powder, cinnamon and cloves. Add dry ingredients to butter/sugar mixture. Mixture will be slightly dry but work at combining the two. Do not add any liquid. Knead dough a few times then roll out ⅛-inch thick (any thicker and cookies will be hard). Cut out in desired shapes with a lightly floured cookie cutter. Bake on lightly greased cookie sheets in a 375̊ oven for 6 to 8 minutes.

Yield: 3 to 5 dozen cookies
Note: Before baking, brush cookies with beaten egg and sprinkle with colored sugar. Cookies can also be “painted” with a narrow brush using corn syrup mixed with food coloring for paint.
