Johnnycakes

1 cup yellow or white cornmeal
¾ tsp. salt
2 tsp. sugar
1 cup water
2 Tbsp. butter
¼ cup milk

Mix cornmeal, salt, and sugar. Heat water and butter to rolling boil. Immediately pour hot mixture over cornmeal mixture in slow trickle, stirring constantly. When butter has melted and all liquid has been absorbed, add milk. Should be fairly thick. Fry like pancakes (about 4 inch diameter) – use equal quantities of butter or margarine and oil. Serve with butter and molasses or maple syrup.

For butter, put a carton of whipping cream in a jar and shake until there’s a lump of butter in liquid. Poor out the liquid and serve.J
