1 large onion, minced
1 to 2 cloves minced garlic, to taste
1 Tbsp. Vegetable oil
2 cups cooked chickpeas, drained and rinsed, if canned
½ cup fresh lemon juice
1 Tbsp. Soy sauce
salt, if desired, to taste
½ cup sesame seeds, toasted and ground
¼ cup tahini:
Combine in a blender 1 tsp. Lemon juice, ½ tsp. Oil, 2 Tbsp. Water, and ¼ cup of finely ground (in a blender or mortar with pestle) sesame seeds.
Saute the onion and garlic in the oil until the vegetables are soft. Set the mixture aside. In a blender or food processor, puree the chickpeas with the onion and garlic, lemon juice, soy sauce, salt, tahini, and sesame seeds. Serve the hummus with pita, fresh or toasted, and /or as a dip for fresh vegetables.
